What is Ceramic Cookware?

Ceramic cookware is new age cookware that is baked in a kiln. Most people hear the word ceramic and instantly think of clay pottery which breaks easily.

However, ceramic cookware is often fired up in a kiln which makes the ceramic longer lasting, durable, stronger and less prone to damage. Once the cookware is fired up, usually the cookware is dipped in a glaze which provides stain resistance and a non stick coating.

Since the glazing occurs when the cookware is extremely hot, when cooking, the maximum heat the pan should be used at is medium-high heat. We recommend never to cook with ceramic cookware at high heat.

Because ceramic cookware does not contain much metal alloys, most of them will not work on an induction stovetop. Luckily, there are other induction cookware sets that you can enjoy.

What are the Ceramic Cookware Dangers?

Cookware safety is the number one concern for cooks and chefs that use non stick cookware.

Ceramic cookware is new age cookware that was introduced to the market 10 years ago. Ceramic cookware came about as a result of the dangers related to Teflon in frying pans. Teflon (“PFTE”) is a chemical coating that is used in traditional cookware to keep food from sticking.

The chemical was later found to have toxic gases released and when inhaled or digested, cause bird flu-like symptoms. Other wide known symptoms are nausea and headaches.

Are There Safe Ceramic Cookware and What is the Safest Ceramic Cookware?

Yes and yes! Safe ceramic cookware does exist!

Ceramic cookware does not contain the chemicals found in Teflon (i.e. PTFE and PFOA) non stick coating. Since the cookware is glazed (in a kiln) instead of coated (or dipped), the cookware is 100% safe.

Unfortunately, there is no answer as to which is the safest ceramic cookware since all of them are 100% safe. The only cookware you should avoid that is not safe (i.e. harmful) is Teflon coated cookware. However, we have not found any ceramic cookware that contains traces of Teflon.

Long story short, ceramic cookware is 100% safe, toxin free and environmentally friendly. It is among the healthiest cookware we recommend. When you go ceramic you can be certain that there are no harmful Teflon chemicals in the cookware.

Solid Ceramic vs Ceramic Coating

The term “ceramic” is used quite loosely in the cookware market. Manufacturers of cookware label their products as “ceramic” but is it ceramic coated or solid ceramic?

We looked at a total of 13 cookware manufactures and found no industry standard labelling. Cookware that was “ceramic coated” was labelled as “ceramic”. And yet, cookware that was “solid ceramic” was also labelled as “ceramic”.

This brought into question why someone would buy a $200 solid ceramic set when they could pay an eighth of the price for ceramic coated cookware. And this confuses buyers.

So what’s the difference?

Through our research, we found that ceramic coated cookware is made differently. Manufacturers start with an aluminium base. The base is dipped in a bath of synthetic ceramic material which coats the aluminium with ceramic. The surface is left to dry and it usually takes anywhere from 2 to 5 days.

On the other hand, solid ceramic cookware starts with clay and water. This mixture is poured into stainless steel moulds that produce a solid ceramic pot and pan. The cookware is hardened using a kiln and then laid to rest. The hardening process usually involves several rounds and the total manufacturing process takes anywhere from 14 to 25 days.

So now you know the differences, you might ask, which one is better?

And that’s not an easy answer as there are pros and cons to both.

With ceramic coated cookware, they are usually lighter and “healthier” (more on this in a second). The ceramic coated cookware is soft so you won’t be able to use hard steel utensils on the cookware. If you do so, you might end up scratching the surface and scratching the aluminium underneath. However, these days, the aluminium used is anodized and completely 100% healthy.

With solid ceramic cookware, they are a lot heavier so you can “feel” the pan while you cook. Another consideration is health. As this cookware is solid ceramic, they do not contain aluminium (although the aluminium on our recommended pots and pans are 100% healthy), so they are healthy as well. With solid ceramic cookware, because they are made of clay and water, they are more prone to chipping. Detailed care must be taken to avoid dropping or banging the cookware against hard surfaces.

Overall, we would recommend safe healthy aluminium cookware that’s coated with ceramic as it’s lighter and less prone to chipping. However, both solid ceramic and ceramic coated cookware would give you the health benefits and are completely 100% PFOA, PTFE, lead and cadmium free.

With continuous use, one can expect general degradation of ceramic coated cookware. However, it can be safely used for 3 to 5 years under normal conditions.

Which Is Better? Ceramic Coated Pans vs Teflon

Ceramic coated pans are better for your health. Ceramic cookware is baked in a kiln and glazed with a non-stick stain resistant coating. Cookware that contains Teflon is made with PTFE (polytetrafluoroethylene), a traditional chemical used to keep food from sticking. PTFE was later found to have caused flu-like symptoms including nausea and headaches.

Does the ceramic need to be “seasoned” from time to time?

The short answer is yes. In order to season your new ceramic pan from time to time, you’ll need 1 tablespoon of cooking oil. Take the cooking oil and rub it onto the surface of the pan using a soft paper towel. Next, place the pan on the stove and over medium heat, let it simmer for 2 to 3 minutes. Take the pan off the stove and let it cool. Hand wash the pan in warm soapy water and rinse. Your cookware is now ready for use again. It’s recommended to do this once every few months before use.

How can I re-surface ceramic pans? Is there a spray available?

There is no way to re-surface ceramic pans once they are scratched and damaged. We have found most sprays available are not food safe and should be avoided on ceramic pans. By digesting those harmful chemicals, you can seriously cause damage to your body and long-term health. The better method is to avoid resurfacing completely and purchase a new pan. Once you made your purchase, make sure you use soft utensils on the pan and avoid high heat. This will prolong the life of your ceramic pan.

Do you have to pretreat ceramic nonstick cookware?

No you do not have to preheat your ceramic nonstick cookware. The only time you need to is when you are seasoning your cookware every few months. Other than that, you can use your ceramic cookware like you would any other pot and pan.

Can you use ceramic pots and pans on an induction stove?

It depends on the ceramic pot and pan. Solid ceramic pots and pans are made of clay and water. Since there are no magnetic properties in the pans, it can not be used on an induction stove. Ceramic coated pots and pans often have an aluminum body. Since aluminum does not have any magnetic properties, it can not be used on an induction stove. However, there are some stainless steel pots and pans coated with ceramic that can be used with an induction stove. It’s best to take a look at the manufacturers labels to know for sure.
