If you love lemon you are going to love this Slow Cooker Paleo Chicken Piccata. It was a hit with my family. It was so moist there was no need for a knife. I served this with roasted potatoes but you could easily serve with rice or riced cauliflower. The chicken had a light lemon flavor and the capers and parsley added a nice flavor and color contrast.

Be sure that you invest in a good quality slow cooker. Our favorite is this programmable cook and carry 6qt oval slow cooker. You can adjust this recipe to feed your family using 4-6 pieces of meat. I personally use 4 to feed my family of 3 with a leftovers for lunch the next day. I use 2 lbs of chicken in my recipe but you can adjust between 4-6 cuts of chicken.

I love that this is an easy freezer meal too! Just simply add all of your ingredients into a gallon size freezer safe bag except for your lemon and chicken broth and freeze. When you are ready to cook simply thaw in the refrigerator overnight. When ready to cook place into a slow cooker and add chicken broth and fresh lemon on top, cover and cook on low. Best of all this is a Whole30 compliant recipe and is naturally gluten free too!

Slow Cooker Paleo Chicken Piccata

Ingredients

  • 4-6 Boneless chicken breasts or boneless chicken thighs I used 2 lbs
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 2 TBSP fresh lemon juice
  • 1/2 cup capers rinse and drain juice – 2.4 oz jar
  • 1 TBSP dried parsley
  • 1 lemon sliced
  • salt and pepper optional

Instructions

  1. In a gallon size freezer safe bag combine all ingredients except fresh lemon and chicken broth.
  2. Freeze
  3. When ready to cook thaw in the refrigerator overnight.
  4. Place into a slow cooker and add chicken broth and fresh lemons on top.
  5. Cook on low for 6-8 hours.
  6. Remove lemons and salt and pepper if desired.

Easy Chicken Piccata Recipe

Chicken Piccata is one of those classic easy chicken recipes that make us jump for joy! I love the flavor combination of the bright lemon juice, salty capers, and creamy butter. It’s an extremely simple recipe, but one that can be dressed up for a romantic date night, or dressed down for a quick weeknight family meal.

  • Boneless skinless chicken breast

Tips for making Easy Chicken Piccata:

  • Use Fresh Lemon Juice. Always use FRESH lemon juice when making the sauce. It makes all the difference!
  • Use unsalted butter for the sauce. There’s plenty of salty taste in the capers and as long as you properly season each chicken breast, this recipe will be plenty salty on its own. By using unsalted butter, we can better control the final taste of the overall recipe.
  • Cut each chicken breast in half. Cutting each breast in half will help the chicken to cook faster and more evenly. In my experience it also makes for a great serving size when paired with delicious side dishes (see below.). If the chicken is still of varying sizes after cutting, you can also pound the chicken to even thickness.

What is the difference between Chicken Piccata and Chicken Francese?

Chicken Piccata and Chicken Francese are pretty similar recipes, with both being served in a lemon butter sauce. While Chicken Piccata only dips the chicken in flour before frying, Chicken Francese dips in both an egg wash as well as flour. Also, Chicken Piccata has the addition of those delicious little flavor bombs, CAPERS!

How to you reheat Chicken Piccata?

  • 2 large boneless skinless chicken breasts cut in half length-wise
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup all-purpose flour
  • 1 tablespoon olive oil
  • 6 tablespoons unsalted butter divided
  • 1 cup white wine OR chicken stock
  • 3 tablespoons freshly squeezed lemon juice
  • 4 tablespoons capers drained
  • Sprinkle both sides of each chicken breast liberally with salt and pepper.
  • Place flour in a shallow bowl and dip each chicken breast to coat. Coat both sides, and shake off any excess. Set aside.

  • Add the chicken stock, lemon juice, and capers to the pan and lightly scrape the bottom of the pan to deglaze.
  • Add the remaining 3 tablespoons butter and allow to melt. Reduce to a simmer and allow to cook for 5 minutes to slightly thicken.
  • Return chicken to the skillet and baste in the sauce. Allow to simmer until chicken is heated through.
  • Serve drizzled with sauce. Enjoy!

Ingredients Needed for Crock Pot Lemon Italian Chicken

  • Chicken breasts
  • Butter
  • Italian dressing mix
  • Lemon juice
  • Chicken broth
  • Minced garlic
  • Capers
  • Pasta

You can find Italian dressing mix and capers in your local grocery store’s condiment aisle. Be sure to drain the capers before using. Capers are packed in a salty brining liquid, and draining them will keep their flavor from being overshadowed by too much salt.

How to Make Easy CrockPot Lemon Italian Chicken

  1. Start with your trusted crock pot. Cut your butter into slices and lay them in the bottom of your the pot. Lay the chicken breasts over the butter, and then sprinkle the chicken with the dry Italian dressing. Pour the lemon juice and chicken broth over the chicken, and then add the minced garlic.

You sure can! Frozen chicken will take about 6 hours on LOW to cook through. Raw chicken will take about 3 hours on LOW to cook. Just be sure your chicken has an internal temperature of 165 degrees F.

  • 1/2 cup unsalted butter
  • 4 boneless, skinless chicken breasts *see note
  • 1 packet Italian dressing mix
  • 1/4 cup lemon juice
  • 1/2 cup chicken broth
  • 2 cloves garlic minced
  • 2 tablespoons capers drained
  • 1 pound pasta (whichever kind you like)
  • Salt & pepper to taste
  • Slice the butter into 8 pats and spread them out on the bottom of the crock pot. Place each chicken breast on two pats of butter.
  • Sprinkle the Italian dressing mix over the chicken. Pour the lemon juice and chicken broth over the chicken. Add the garlic to your crock pot.
  • Cover and cook on HIGH for 4-5 hours or on LOW 6-8 hours.
  • Cook the pasta according to the package directions until al dente when the chicken in about 15 minutes from being done. Drain the pasta.
  • Add capers to the chicken after cooking has finished.
  • Plate the pasta and top with chicken, sauce, and capers from the crock pot. Serve immediately.

Slow Cooker Chicken Piccata (Paleo)

Chicken Piccata is a dish that originally comes from Italy. The word Piccata means ‘larded’ and when used in reference to cooking it means sliced, sauteed, and cooked with lemon and butter. Chicken Piccata has always been a favorite in our house and this slow cooker version is easy, much healthier, and incredibly delicious! I don’t use flour, and use ghee instead of butter to give the sauce the buttery taste. This slow cooker chicken piccata dish needs minimal prep and you get a tasty dinner that the whole family can enjoy. I like to serve it with mashed cauliflower and roasted broccoli. One of the husband’s favorite dinners.

Ingredients:

2 tbs extra virgin olive oil
6 boneless, skinless chicken breasts
2 tsp sea salt
1 tsp paprika
1 tsp freshly ground black pepper
1 1/2 cups low-sodium chicken broth
1 tbs ghee
2 1/2 lemons, juiced (about 1/2 cup)
1/2 lemon, sliced
1/4 cup capers, drained
2 tablespoons fresh parsley leaves, chopped

Directions:

Heat the olive oil in a large skillet over medium high heat.
Season the chicken breasts on both sides with salt, pepper, and paprika.
Sear the chicken on both sides until browned, about 2-3 minutes per side.
Place chicken in slow cooker.


In medium bowl or measuring cup mix, broth, lemon juice, capers, and ghee.
Pour over chicken and add lemon slices.


Cover and cook on the LOW setting for 7-8 hours or on high for 3-4 hours and until the chicken has an internal temperature of 165°F.
Transfer the chicken to a serving dish.
Pour some or all of the liquid and capers from the slow cooker over the chicken, top with fresh chopped parsley and extra lemon slices.

Typically, chicken breasts (or thighs) are dredged in seasoned flour and pan fried, then simmered in a light and flavorful lemon sauce.

Slow Cooker Chicken Piccata

I wanted to take the traditional flavors in chicken piccata and lighten the dish.

Since I believe that the best part of chicken piccata is the sauce, I skipped the breading and placed the ingredients in a slow cooker to allow the chicken to cook low and slow while absorbing the wonderful flavors in the lemon sauce.

By slow cooking the chicken, it becomes incredibly tender and juicy and you’ll notice that every bite will be filled with a flavor that is simply irresistible.

In this light chicken piccata recipe, you still have all of the wonderful flavors you’ve come to know in this savory dish, but with less carbs and calories.

Unlike many slow cooker recipes where you set the timer and let it cook for 8 hours or more, this slow cooker Chicken Piccata cooks in 4 hours making it an ideal weekend meal or a meal that can be ready by lunchtime.

What To Serve With Chicken Piccata

You could really serve chicken piccata with just about anything, but you’ll want to take advantage of its glorious sauce. You might like to consider serving it with any of these single serving side dish recipes:

Rice

Brown Rice

Mashed Potatoes

Buttered noodles

For my slow cooker single serving meals, I use a small 1.5-quart slow cooker.

If you don’t have a small slow cooker, you can modify a large slow cooker by placing a smaller oven-safe bowl inside the bowl of the slow cooker.

How To Modify A Large Slow Cooker

If you already have a large slow cooker but still want to make any of our slow cooker recipes for one, follow these easy steps to modify your slow cooker:

  • Place an oven safe bowl inside the base of a slow cooker.
  • Fill the bowl with the ingredients and cover the slow cooker with the lid. Cook as directed. The pictures below show how I make Red Beans and Rice For One in a large slow cooker.

Keep in mind that slow cookers work best when they are about three quarters of the way full.

When choosing the right oven-safe bowl to place inside your slow cooker, make sure that when the ingredients are placed inside the bowl, they take up at least two thirds to three quarters of bowl.

When the bowl isn’t full enough, the food inside will cook faster and possibly burn.

  • 3 ounces thinly sliced onions (about 1/4 small onion)
  • 8 ounces boneless, skinless chicken breasts or thighs (about 2 thin pieces)
  • 3/4 cup chicken broth
  • 1/4 cup lemon juice
  • 1/4 teaspoon kosher salt
  • 1/8 cup capers , drained
  • Place the sliced onions in the bowl of a small slow cooker. (See post for instructions on modifying a large slow cooker).
  • Place the chicken on top of the sliced onions.
